• Mincemeat Cookies

    Hi All,

    A few weeks ago Ruth mentioned she made Mincemeat cookies, so
    I had to try this. Made a batch today (Gluten Free) and they turned out
    great, we all liked them.

    This is the recipe I used (from the internet).

    Title: Mincemeat Cookies
    Categories: Dessert
    Yield: 8-12 cookies

    1/2 c butter
    1 c sugar
    1 egg
    2 c Flour
    1 t Baking Powder
    1/2 t Baking Soda
    1/2 t salt
    1 c Mincemeat

    [Note: Mincemeat cookies. ]
    Mix all ingredients together.
    If you find it is not quite thick enough, slowly add more flour.
    Drop by teaspoons on greased cookie sheet.
    Bake 350 for 10-12 min. (My oven was 12 mins, then I let them
    cool IN THE oven with the heat off for about an hour)
    Cool on a baking rack. (I did not do this)

    Here's another take (bars not cookies) very similar to what my Granny
    used to make around the Xmas holidays. Should be no trick to make GF.

    Title: Mincemeat Hermits
    Categories: Cookies, Snacks, Fruits, Herbs
    Yield: 32 Servings

    2 c A-P flour
    1/2 ts Baking powder
    1/2 ts Baking soda
    1/2 ts Ground cinnamon
    1/2 c Butter
    1/2 c Sugar
    1/2 c Molasses
    1 lg Egg
    1 c Prepared mincemeat

    Sift flour, baking powder, baking soda and cinnamon onto
    wax paper. Beat butter, sugar and egg and molasses in a
    medium size bowl until well mixed and light and fluffy,
    about 2 minutes. Stir in mincemeat by hand and add flour
    mixture and beat until well blended. Grease 13" x 9" x 2"
    pan.

    Bake at 350ºF/175ºC for 30 minutes or until center springs
    back. Cool for 15 minutes then cut into 32 pieces.
