    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Spicy Chicken Nuggets
    Categories: Five. bread, Cheese, Chilies, Poultry
    Yield: 6 servings

    1 1/2 c Panko bread crumbs
    1 1/2 c Grated Parmesan cheese
    1/2 ts Ground chipotle pepper
    1/4 c Butter; melted
    1 1/2 lb Boned, skinned chicken; in 1
    - 1/2" pieces

    Set oven @ 400ºF/205ºC.

    In a shallow bowl, mix bread crumbs, cheese and, if
    desired, chipotle pepper. Place butter in a separate
    shallow bowl. Dip chicken pieces in butter, then in
    crumb mixture, patting to help coating adhere.

    Place chicken in a greased 15" X 10" X 1" baking pan;
    sprinkle with remaining crumb mixture. Bake 20-25
    minutes or until no longer pink.

    Title: Fried Chicken & Waffles
    Categories: Poultry, Herbs, Breads, Citrus, Dairfy
    Yield: 8 servings

    1 3/4 c A-P flour
    1 tb Dried thyme
    1 tb Paprika
    2 ts Salt
    2 ts Garlic powder
    1 ts Pepper
    1 lg Egg
    1/3 c Milk
    2 tb Lemon juice
    4 lb Broiler/fryer chicken; cut
    - up
    Oil for deep-fat frying

    MMMMM--------------------------WAFFLES-------------------------------
    2 c A-P flour
    1 tb Sugar
    2 ts Baking powder
    1/2 ts Salt
    3 lg Eggs; separated
    2 c Milk
    1/4 c Oil
    Syrup or jam/jelly

    In a shallow bowl, mix the first 6 ingredients. In a
    separate shallow bowl, whisk egg, milk and lemon juice
    until blended. Dip chicken in flour mixture to coat all
    sides; shake off excess. Dip in egg mixture, then again
    in flour mixture.

    In an electric skillet or deep fryer, heat oil to
    375ºF/190ºC. Fry chicken, a few pieces at a time, until
    skin is golden brown and juices run clear, 6-10 minutes
    on each side. Drain on paper towels, keep warm.

    For the waffles, in a bowl, combine the flour, sugar,
    baking powder and salt. Combine the egg yolks, milk and
    oil; stir into dry ingredients just until moistened. In
    a small bowl, beat egg whites until stiff peaks form;
    fold into batter. Bake in a preheated waffle maker
    according to manufacturer's directions. Place chicken on
    waffles; drizzle with maple syrup.

    Title: Baked Buffalo Chicken
    Categories: Poultry, Herbs, Breads, Chilies
    Yield: 4 servings

    3/4 c Buffalo wing sauce; divided
    4 (6 oz ea) boned, skinned
    - chicken breast halves
    3/4 c A-P flour
    3/4 ts Dried tarragon
    1/2 ts Pepper
    1 1/4 c Panko bread crumbs

    Pour 1/3 cup wing sauce into a shallow dish. Add chicken
    and turn to coat. Let stand 15 minutes or refrigerate,
    covered, up to 24 hours.

    Set oven @ 400ºF/205ºC.

    Drain chicken, discarding marinade. In a shallow bowl,
    mix flour, tarragon and pepper. Place bread crumbs and
    remaining wing sauce in separate shallow bowls. Dip
    chicken in flour mixture to coat all sides; shake off
    excess. Dip in wing sauce, then in bread crumbs, patting
    to help coating adhere.

    Place chicken on a rack in a 15" X 10" X 1" baking pan.
    Bake 25-30 minutes.

    Title: Ravioli w/Apple Chicken Sausage
    Categories: Pasta, Greens, Poulkry, Herbs
    Yield: 4 servings

    18 oz Bag frozen butternut squash
    - ravioli
    20 oz (2 boxes) frozen creamed
    - spinach
    1 tb Olive oil
    12 oz Fully cooked apple chicken
    - sausage links; in 1/2"
    - slices
    1 ts Maple syrup
    1/4 ts Pumpkin pie spice

    Cook ravioli according to package directions. Prepare
    spinach according to package directions. Meanwhile, in a
    large skillet, heat oil over medium heat. Add sausage;
    cook and stir until browned, 2-4 minutes.

    Drain ravioli. Add ravioli, spinach, maple syrup and pie
    spice to sausage; heat through.

    Title: Rosemary-Lemon Chicken Thighs

    Yield: 4 servings

    2 sl Bacon; chopped
    1 ts Minced fresh rosemary
    +=OR=+
    1/4 ts Dried rosemary; crushed
    4 Boned, skin-on chicken
    - thighs
    1/8 ts Pepper
    ds Salt
    1/3 c Chicken broth
    3 tb Lemon juice

    In a large skillet, cook bacon and rosemary over medium
    heat until bacon is crisp, stirring occasionally. Using
    a slotted spoon, remove bacon to paper towels; reserve
    drippings in pan.

    Sprinkle chicken with pepper and salt; brown in
    drippings on both sides. Cook, covered, skin side down,
    over medium heat 4-6 minutes. Remove from pan; keep
    warm. Pour off drippings from pan.

    Add broth and lemon juice to same skillet. Bring to a
    boil, scraping to loosen browned bits from pan; cook
    until liquid is reduced by half. Spoon over chicken;
    sprinkle with bacon.

    Title: Caribbean Chicken Stir-Fry
    Categories: Five, Poultry, Fruits, Rice, Chilies
    Yield: 4 servings

    2 ts Cornstarch
    1/4 c Water
    1 lb Boned, skinned chicken; in
    - 1/2" strips
    2 ts Caribbean jerk seasoning
    15 oz Can mixed tropical fruit;
    - drained, coarse chopped
    17 5/8 oz (2 pkg) ready-to-serve brown
    - rice

    In a small bowl, mix cornstarch and water until smooth;
    set aside.

    Coat a large skillet with cooking spray; heat over
    medium-high heat. Add chicken; sprinkle with jerk
    seasoning. Stir-fry 3-5 minutes or until no longer pink.
    Stir cornstarch mixture and add to pan. Add fruit. Bring
    to a boil; cook and stir 1-2 minutes or until sauce is
    thickened.

    Meanwhile, heat rice according to package directions.
    Serve with chicken.

    12 Taco shells
    1 Rotisserie chicken; skinned,
    - shredded
    11 1/2 oz Jar Thai peanut sauce;
    - divided
    1 md Cucumber; julienned
    1 md Carrot; julienned
    1/3 c Minced fresh cilantro

    Heat taco shells according to package directions.
    Meanwhile, in a large skillet, combine chicken and 1/2
    cup peanut sauce; heat through.

    In a small bowl, mix cucumber, carrot and cilantro.
    Serve chicken in taco shells with cucumber mixture and
    remaining peanut sauce.
