    Title: BBQ Chicken Bites
    Categories: Five, Pork, Poultry, Sauces
    Yield: 18 servings

    6 sl Bacon
    3/4 lb Boned, skinned chicken; in
    - 18 1" cubes
    3 ts Montreal steak seasoning
    1 ts Prepared horseradish; opt
    1/2 c Barbecue sauce

    Set oven @ 400ºF/205ºC.

    Cut bacon crosswise into thirds. Place bacon on a
    microwave-safe plate lined with paper towels. Cover with
    additional paper towels; microwave on high 3-4 minutes
    or until partially cooked but not crisp.

    Place chicken in a small bowl; sprinkle with steak
    seasoning and toss to coat. Wrap a bacon piece around
    each chicken cube; secure with a toothpick. Place on a
    parchment-lined baking sheet.

    Bake 10 minutes. If desired, add horseradish to barbecue
    sauce; brush over wrapped chicken. Bake until chicken is
    no longer pink and bacon is crisp, 5-10 minutes longer.

    Title: Grilled Basil Chicken & Tomatoes
    Categories: Poultry, Herbs, Vegetables
    Yield: 4 servings

    3/4 c Balsamic vinegar
    1/4 c (tight packed) fresh basil
    - leaves
    2 tb Olive oil
    1 cl Garlic; minced
    1/2 ts Salt
    8 Plum tomatoes
    4 (4 oz ea) boned, skinned
    - chicken breast halves or
    - thighs

    For marinade, place first five ingredients in a blender.
    Cut 4 tomatoes into quarters and add to blender; cover
    and process until blended. Halve remaining tomatoes for
    grilling.

    In a bowl, combine chicken and 2/3 cup marinade;
    refrigerate, covered, 1 hour, turning occasionally.
    Reserve remaining marinade for serving.

    Drain chicken, discarding marinade. Place chicken on an
    oiled grill rack over medium heat. Grill chicken,
    covered, 4-6 minutes per side. Grill tomatoes, covered,
    over medium heat until lightly browned, 2-4 minutes per
    side. Serve chicken and tomatoes with reserved marinade.
