The originating address should be specified in a form that
constitutes a valid return address for the originating network.

Original network is the vanilla FidoNet, I guess. It would be hard to constitute a valid return address from "303.fidoutf8@1:103/705".

Indeed there is. The CHRS kludge is correct.

Golded shows garbage and goated shows two rectangles meaning "no glyph".

But if I reply with Winv as external editor in Golded I can see two characters that look like Chinese to me.

    Multimail also shows garbage.

It says Tang-Dynasty. There was a chinese restaurant here with that name.

If I reply from multimail I get notepad kladblok as external editor and that displays it correct.

Notepad handles UTF-8 quit well but the last time I tried it as external editor for Golded it insisted on adding a BOM to the message text. That was many years ago so maybe newer versions of notepad do not do that anymore. Adding or using a BOM in UTF-8 text is considered obsolete practise.

Here, on Windos 11, Notepad does not require a BOM.

Try Notepad++. It works pretty fine as an external editor in GoldED.
