    January 21: New England Clam Chowder Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Hatteras Style Clam Chowder
    Categories: Soups, Seafood, Vegetables, Pork, Herbs
    Yield: 8 Servings

    1 tb Oil
    1 lg Onion; chopped
    5 Ribs celery; sliced
    4 Carrots; sliced or diced
    4 c Peeled, diced white potatoes
    32 oz (2 cans) minced clams; with
    - juice
    3 qt Clam juice
    1 ts Dried thyme
    1/2 ts Ground black pepper
    8 sl Crisp cooked bacon; crumbled

    In a large pot over medium heat, cook onion, celery and
    carrots in oil* until they begin to soften. Stir in
    potatoes, clams, clam juice, thyme, pepper and bacon.
    Bring to a boil, then reduce heat and simmer 20 minutes,
    or until potatoes are tender.

    * you may, if you wish, use the dripping from the bacon
    to saute the vegetables.
